Chicken and Spinach Zoodles

Ingredients

medium zucchini, spiralized and set aside
|

butter

garlic, minced
|
|

packed fresh spinach
|

freshly grated Parmesan cheese

chicken breast, cooked ahd chopped

Salt, to taste
|

Pepper, to taste

Garnish with: |

Fresh flat leaf parsley

|
Directions:
Place a large skillet over medium-high heat. Melt the butter and add the garlic; cook for 1 to 2 minutes.
Add the spiralized zucchini and spinach. Gently toss and cook until spinach leaves are wilted, about 2 to 3 minutes.
Stir in the chicken and the Parmesan cheese. Season with salt and freshly ground black pepper to taste.
Remove from heat and serve. Garnish with fresh parsley.
